  Source: Williams Sonoma Ingredients: 2 cups flour 1 teaspoon baking powder 1/2 teaspoon salt 1 tablespoon sugar 4 eggs, separated 2 cups milk 4 tablespoons butter, melted, plus more for cooking Fillings such as jam, peanut butter, chocolate or fruit Syrup, whipped cream or powdered sugar for serving Directions: In a bowl, whisk together the flour, baking powder, salt and sugar. In a small bowl, lightly whisk the egg yolks, then whisk in the milk and the melted butter. Whisk the yolk mixture into the flour mixture until well combined; the batter will be lumpy.  In another bowl, using an electric mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff but not dry peaks form, 2 to 3 minutes. Using a rubber spatula, gently stir the whites into the batter in 2 additions.  Put 1/4 teaspoon butter in each well of the pan. Set over medium high heat and heat until butter begins to bubble. Hashbrown Casserole

  Source:  Cincy Shopper Ingredients: 1 can cream of chicken soup 1 small onion, diced 1 teaspoon salt 1/2 teaspoon black pepper 2 cups grated cheddar 1 cup sour cream 30 oz. frozen hashbrowns, thawed 1/2 cup butter, melted Directions: In a large bowl, mix together the first 4 ingredients and one cup of the cheddar. Add the sour cream and mix until combined. Add the hashbrowns and butter and mix until combined. Spread the mixture in a greased 9"x13" dish. Sprinkle the remaining cheese on top. Bake at 350 for 45-55 minutes. Note: This can be prepared in advance and baked when needed.

Chocolate Cake

  Source:  Sally's Baking Addiction  (adapted slightly) Ingredients: 1 3/4 cups flour 3/4 cup unsweetened cocoa powder 1 3/4 cups sugar 2 teaspoons baking soda 1 teaspoon baking powder 1 teaspoon salt 2 teaspoons espresso powder 1/2 cup oil 2 eggs, room temperature 2 teaspoons vanilla 1 cup buttermilk, room temperature 1 cup freshly brewed hot strong coffee Directions: Whisk together the dry ingredients in a mixing bowl. Set aside. In another mixing bowl, use a stand mixer to whisk together the oil, eggs and vanilla on medium-high speed until combined. Add the buttermilk and whisk until combined. Slowly add the dry ingredients to the wet ingredients, a little at a time, whisking each time until combined. Slowly add the coffee, a little at a time, whisking each time until combined. Batter will be thin. Spray 2 8 or 9 inch cake pans with cooking spray, line the bottoms with parchment paper, and spray again. Divide the batter evenly between the pans.   Source:  The Frugal Girls Ingredients: 6 tablespoons salted butter, softened 3/4 cup unsweetened cocoa powder 2 1/2 cups powdered sugar 7 tablespoons milk 1 teaspoon vanilla extract Directions: In a mixing bowl, whisk together the cocoa powder and powdered sugar until well combined. Using a mixer, cream the butter until smooth. Gradually add the cocoa powder and powdered sugar mixture and continue creaming until well combined. Add the vanilla and gradually add the milk until the desired consistency is reached. Scrape down the sides of the bowl and mix until well combined. 

Chicken Parmesan Meatballs

  Source:  Dinner: A Love Story  (slightly adapted) Ingredients: 1 1/4 lbs. ground chicken 1/2 cup breadcrumbs onion powder, to taste dried parsley, to taste 1/2 cup grated parmesan cheese salt, to taste pepper, to taste 1 teaspoon minced garlic 1 egg, whisked zest of half a lemon 3 tablespoons olive oil pizza sauce mozzarella slices Directions: Place the first 10 ingredients in the mixing bowl of a stand mixer. Using the paddle attachment, mix until all ingredients are combined. Line a rimmed baking sheet with foil and spray with cooking spray. Use a small cookie dough scoop to form the mixture into small balls and place them on the baking sheet. In a small bowl mix together the olive oil and a spoonful of pizza sauce. Brush the mixture over the meatballs. Bake at 400 for 10 minutes. Remove from the oven, spoon some pizza sauce over each ball and place a small slice of cheese on each one. Return to the oven and broil on high until the cheese is melted and starts to bubble.

Hamburger Potato Casserole

  Source:  South Your Mouth  (slightly adapted) Ingredients: 2 lbs. ground beef 1 small onion, diced 3 baking potatoes, peeled and thinly sliced salt and pepper 2 cups cheddar cheese, grated 1 can condensed cheddar soup 12 oz. half and half 1/2 cup milk 1/2 teaspoon salt 1/2 teaspoon garlic powder 1/4 teaspoon pepper Directions: Cook and crumble the ground beef in a skillet along with the onion. Once the beef is cooked, drain on paper towels. Spray a 9"x13" dish with cooking spray. Place a layer of potato slices in the bottom of the dish. Season with salt and pepper. Layer 1/3 of the beef and onion over the potato slices. Layer 1/3 of the grated cheddar over the beef. Repeat layers 2 more times. In a bowl, combine the soup, half and half, milk, salt, garlic powder and pepper and whisk together. Pour the mixture over the potatoes, beef and cheese layers. Cover with foil and bake at 350 for an hour. Remove the foil and bake an additional 15 minutes.

Banana Cake with Peanut Butter Cream Cheese Frosting

  Source: New Better Homes and Gardens Cook Book (adapted) Cake Ingredients: 2 eggs 2 1/4 cups flour 1 1/2 cups sugar 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup mashed ripe bananas (about 3) 3/4 cup buttermilk 1/2 cup shortening 1 teaspoon vanilla Frosting Ingredients: 6 ounces cream cheese, softened 4 tablespoons butter, softened 2/3 cup creamy peanut butter 2 teaspoons vanilla 6 cups sifted powdered sugar splash of milk Directions: Allow eggs to stand at room temperature for 30 minutes.  Meanwhile, grease and lightly flour two 8 or 9-inch round cake pans or 1 9x13-inch pan or place cupcake liners in muffin pan.  Set pans aside. Mix together flour, sugar, baking powder, baking soda and salt.  In a mixing bowl mix bananas, buttermilk, shortening and vanilla.  Gradually add flour mixture to banana mixture until combined.  Add eggs; beat on medium speed for 2 minutes.  Pour batter into prepared pan(s). Cheesy Ranch Tacos

  Source:  Mix & Match Mama  (adapted) Note: This recipe is enough to feed 8 people or 4 people for 2 meals. Ingredients: 3 lbs. lean ground beef 1 1/2 (1 oz.) packets Ranch mix 2 (4 oz.) cans chopped green chilies, drained generous drizzle of Ranch dressing (to taste) 4 cups grated cheddar crunchy taco shells taco toppings Directions: Brown the ground beef and drain the fat. Add the Ranch mix, chilies and ranch dressing to the pan with the beef. Stir to combine. Add about 3 cups of cheddar and stir until melted. Place beef mixture in taco shells and place them standing up in a baking dish. Bake at 400 for about 8 minutes. Top with remaining cheese as soon as they come out of the oven. Serve with desired toppings.

Strawberry Upside Down Cake

  Source:  Bunny's Warm Oven Ingredients: 1/4 cup plus 2 tablespoons butter, softened 1/2 cup brown sugar 1 cup sliced strawberries 1 1/3 cup flour 2/3 cup sugar 2 teaspoons baking powder 2/3 cup milk 1 egg, room temperature 1 teaspoon vanilla Directions: Melt 2 tablespoons butter and pour into a round cake pan. Sprinkle the brown sugar over the melted butter and gently stir to combine. Spread the mixture in the bottom of the pan. Sprinkle the strawberries evenly over the butter and brown sugar mixture. In a mixing bowl, combine the dry ingredients. Add the remaining butter (1/4 cup), milk, egg and vanilla and mix until combined. Gently spread the batter over the strawberries, trying not to move the strawberries around the pan. Bake at 350 for 30-35 minutes. Allow the cake to cool for 10 minutes before flipping it onto a cake plate. (Run a knife around the edge before flipping.) Cool the cake completely before serving.

Ham & Cheese Breakfast Strata

  Source:  Lil' Luna  (slightly adapted) Ingredients: 6 slices sourdough bread, sliced into cubes 2 cups grated cheddar cheese 2 cups diced ham (about 1/2 lb.) 1/4 cup butter 3 eggs 1 1/2 cups milk salt & pepper Directions: Lightly spray an 8" square baking dish with cooking spray. Spread half of the bread in the bottom of the dish. Sprinkle half of the cheese and half of the ham over the top. Repeat layers with the remaining bread, cheese and ham. In a glass mixing bowl, microwave the butter until melted. Add the eggs and whisk together. Add the milk, salt and pepper and whisk again. Pour the egg mixture over the bread mixture. Cover and refrigerate for at least 2 hours or as long as overnight. Bake at 350 for 45-50 minutes. Cover the top with foil if it starts to get too brown.

Circus Animal Cookie Cheesecake

  Ingredients: 2 11-oz. bags Circus Animal Cookies 6 tablespoons butter, melted 4 8-oz. packages cream cheese, room temperature 1 1/4 cups sugar 4 eggs, room temperature 2 teaspoons vanilla 6 oz. white chocolate chips 1/4 cup heavy cream sprinkles Directions: Wrap the outside of a 9" springform pan with foil and lightly spray the inside with cooking spray. To make the crust, pour 1 bag of cookies in a food processor and blend until completely crumbled. Pour the butter in with the cookie crumbs and blend until well combined. Spread the mixture into the bottom of the springform pan. Use the bottom of a glass to flatten the mixture evenly across the bottom of the pan. To make the filling, in the bowl of a stand mixer, cream together the cream cheese and sugar. Add the eggs and vanilla and mix until combined. Caramelized French Toast

  Source:  The Food Charlatan Ingredients: 3 egg yolks 1 1/2 cups heavy cream 1/4 cup sugar 1 tablespoon vanilla 1/4 teaspoon kosher salt 1 teaspoon cinnamon 1 loaf brioche bread, thickly sliced (tip: let the bread sit out for several hours to dry out) butter extra sugar for caramelizing maple syrup Directions: In a mixing bowl, whisk together the egg yolks, cream, sugar, vanilla, salt and cinnamon. Pour the mixture into a shallow baking dish. Heat the griddle. Melt butter onto each spot of the griddle where a slice will cook. Place slices of bread in the egg mixture. Allow the bread to soak for about 10-15 seconds, then flip and allow the other side to soak for 10-15 seconds. Place the slices on the griddle. Cook for a few minutes until the bottom is light brown. Before flipping, sprinkle the top of the bread with a little sugar. Flip the slices and cook until this side is done. Breakfast Pizza

  Source:  Plain Chicken  (adapted slightly) Ingredients: 2 eggs 1/4 cup heavy cream salt pepper 2 cups grated cheese, such as mozzarella and cheddar 1/2 cup breakfast meat (ham, bacon, sausage), cooked and chopped 1 12-inch precooked pizza crust Directions: Whisk together the eggs, cream, salt and pepper. Stir in the cheese and meat. Place the pizza crust on a baking sheet and pour the mixture over the crust, spreading close to the edges. Bake at 375 for 10-12 minutes or until the eggs are cooked and the cheese is slightly browned.

Creamy Green Chicken Burritos

Source:  Meg Duerksen  (adapted) Ingredients: 3-4 cups chicken, cooked and shredded (about 3-4 breasts) 1 cup sour cream, divided cilantro, chopped, to taste 1 large can diced green chilies 1 1/2 teaspoons minced garlic 1 teaspoon cumin 1 cup cheddar cheese, grated 1 package flour tortillas 1 jar green salsa 1/2 cup water Directions: To make the chicken mixture, in a large bowl, mix together the chicken, 1/2 cup sour cream, cilantro, chilies, garlic, cumin and 1/4 cup cheese. To make the sauce, blend together 1/2 cup sour cream, salsa, water and cilantro. Spread 1 cup of sauce over the bottom of a 9"x13" baking dish. Place 1/3 cup of chicken mixture in each tortilla, roll up and place in dish. Once all of the chicken mixture is used, pour the remaining sauce over the burritos. Bake at 350 for 35 minutes. Sprinkle with remaining cheese and bake for an additional 10-15 minutes. Note: For a gluten free version, use corn tortillas.

Mona's Brownies

  Brownie Ingredients: 1 cup butter, melted 2 cups sugar 4 eggs 1 teaspoon vanilla 1/2 teaspoon salt 3 rounded tablespoons cocoa powder 2 cups flour Icing Ingredients: 1/4 cup butter, melted 1 teaspoon vanilla 5 tablespoons cocoa powder 4 cups powdered sugar 1/3 cup milk Directions: To make the brownies, mix the butter and sugar. Add the eggs and vanilla and mix again. Add the salt and cocoa powder and mix again. Slowly add the flour and mix until well incorporated. Bake in a 9"x13" dish at 300 for 30-35 minutes. To make the icing, mix the butter, vanilla and cocoa powder. Alternate adding the powdered sugar and milk a little at a time. Mix until smooth. Ice the brownies while they are hot. Allow to cool completely before serving.

Lemon Cookies

  Source:  Gimme Some Oven Ingredients: 1 box lemon cake mix 2 eggs 1/3 cup vegetable oil zest of half a lemon juice of half a lemon powdered sugar Directions: Mix all of the ingredients except the powdered sugar. For easier handling, refrigerate the dough for at least 30 minutes. Form the dough into small balls and roll each in powdered sugar. Bake at 375 on a cookie sheet lined with parchment paper for 8-10 minutes, being careful not to overbake.

S'mores Pancakes

  Source:  Bombshell Bling  (adapted slightly) Ingredients: 1 cup flour 1 cup graham cracker crumbs 2 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 cups buttermilk 3 tablespoons butter, melted 1 egg chocolate chips marshmallow bits buttermilk syrup mini marshmallows (optional) Directions: Mix together the flour, graham cracker crumbs, sugar, baking powder, baking soda and salt. Add the buttermilk, butter and egg. Stir until well combined. Cook the batter as you would normally cook pancakes, adding chocolate chips and marshmallow bits before flipping. Serve with buttermilk syrup and extra mini marshmallows, if desired.

Buttermilk Syrup

Source:  Bombshell Bling Ingredients: 1 cup buttermilk 1 cup sugar 1/2 cup butter 1 tablespoon vanilla 1/2 teaspoon baking soda Directions: Heat the buttermilk, sugar and butter in a saucepan over medium heat, stirring often so the buttermilk doesn't curdle. When the mixture starts to bubble around the edges remove it from the heat and stir in the vanilla and baking soda. The mixture will bubble up. Serve over pancakes.   

Peanut Butter Scones

Source:  Kelly Lynn's Sweets & Treats  (adapted) Ingredients: 2 1/2 cups flour 1/2 cup brown sugar, packed 2 tablespoons white sugar pinch of salt 3 teaspoons baking powder 1 teaspoon baking soda 1/3 cup butter, cold 1 cup peanut butter 1 egg, beaten 1/2 cup milk 1 1/2 teaspoons vanilla  raw sugar for sprinkling Directions: Preheat oven to 425. Line a cookie sheet with parchment paper and set aside. In a large bowl, mix the dry ingredients. Use a pastry cutter to cut in the butter, then cut in the peanut butter. Add the egg, milk and vanilla. Stir until well combined. Use hands to mix if needed. Divide the dough into two balls. On the cookie sheet, press each ball into a circle until it is about 3/4" thick. Slice each circle into 8 wedges. Sprinkle the top with raw sugar. Bake for 15-20 minutes or until done. Notes: Instead of baking all the scones at once, place half the dough on a second sheet of parchment paper. Prepare the wedges, but don't sprinkle with sugar. Fre

Granddaddy Kahler's Chili

  Ingredients: 2 tablespoons butter 2 onions, chopped 4 lbs. ground beef (80/20) 4 teaspoons minced garlic 2 cans Rotel tomatoes 2 small cans tomato sauce 2 packets chili seasoning 1 1/2 teaspoons oregano 1 1/2 teaspoons cumin 6 tablespoons chili powder 2 teaspoons salt 1 1/2 cups water Directions: In a Dutch oven, sauté onions in butter until translucent. Add beef, chopping and cooking until almost done. Add the garlic, stir to combine, and cook until beef is done. Add the remaining ingredients, stir to combine and simmer for at least one hour. Notes: This recipe should make about 10 servings. This recipe can be cooked in a slow cooker. Follow directions above until beef is done. Then transfer beef mixture to slow cooker, add remaining ingredients and stir to combine. Cook on high for 3-4 hours or on low for 6-8 hours.

Bisquick Cinnamon Biscuits

  Source:  Adventures of Mel Ingredients: 8 teaspoons sugar 2 teaspoons cinnamon 3 1/2 cups Bisquick 1 cup water 2 tablespoons butter, softened pinch of salt 1/2 teaspoon vanilla 3 cups powdered sugar 1/4 cup whole milk (or low fat milk and half and half) Directions: In a small bowl, stir the sugar and cinnamon together until combined. Pour the Bisquick and water into a large bowl. Pour the cinnamon sugar over the top. Stir until combined. Drop the biscuits onto a baking sheet about 1-2 inches apart. Bake at 425 for 8-11 minutes. While the biscuits bake, mix the butter, salt, vanilla, powdered sugar and milk. Immediately after taking the biscuits out of the oven spoon or brush the icing over the biscuits.

4 Ingredient Cake Mix Cookies

  Source:  Never Ending Journeys Ingredients: 1 box cake mix 2 eggs 1/2 cup vegetable or canola oil 1 10-12 oz. bag of baking chips Directions: Mix together the cake mix, eggs and oil. Mix in the chips. Chill the dough for at least an hour. Roll the dough into balls. Bake at 350 for 9 minutes.

Meatloaf

  Source:  Ina Garten  (adapted) Ingredients: 1 tablespoon olive oil 1 large onion, finely diced 1/3 teaspoon dried thyme 2 teaspoons kosher salt black pepper, to taste 3 tablespoons Worcestershire sauce 1/3 cup beef broth 1 tablespoon tomato paste 2 1/2 lbs. ground beef (80/20) 1/2 cup plain breadcrumbs 2 eggs, beaten 1/2 cup ketchup Directions: Heat the olive oil in a medium saute pan. Add the onion, thyme, salt and pepper and cook over medium-low heat, stirring occasionally, for 8-10 minutes or until the onion is translucent but not brown. Off the heat, add the Worcestershire sauce, broth and tomato paste. Stir to combine and allow to cool slightly. In a large mixing bowl, combine the beef, onion mixture, breadcrumbs and eggs. Mix lightly with a fork; do not mash. Shape the mixture into a large rectangular loaf on a sheet pan lined with parchment paper. Spread the ketchup evenly over the top. Bake at 325 for an hour to an hour and fifteen minutes.

Berry French Toast Casserole

  Source:  Joyous Apron  (adapted) Ingredients: 12-14 cups French bread, cubed 8 eggs 2 cups milk 2 teaspoons vanilla 1 teaspoon cinnamon 2/3 cup brown sugar 2 cups berries maple syrup Directions: Grease a 9"x13" baking dish and spread the bread cubes across the bottom of the pan, filling about 3/4 full. Whisk together the eggs, milk, vanilla, cinnamon and brown sugar. Pour the egg mixture over the bread. Sprinkle the berries over the top. Cover the dish and refrigerate for at least 4 hours or as long as overnight. Remove the dish from the refrigerator about 30 minutes prior to baking. Bake at 350 for 35-40 minutes. Drizzle maple syrup over individual portions.
