Strawberry Upside Down Cake

Ingredients:
1/4 cup plus 2 tablespoons butter, softened
1/2 cup brown sugar
1 cup sliced strawberries
1 1/3 cup flour
2/3 cup sugar
2 teaspoons baking powder
2/3 cup milk
1 egg, room temperature
1 teaspoon vanilla


Directions:
Melt 2 tablespoons butter and pour into a round cake pan. Sprinkle the brown sugar over the melted butter and gently stir to combine. Spread the mixture in the bottom of the pan. Sprinkle the strawberries evenly over the butter and brown sugar mixture. In a mixing bowl, combine the dry ingredients. Add the remaining butter (1/4 cup), milk, egg and vanilla and mix until combined. Gently spread the batter over the strawberries, trying not to move the strawberries around the pan. Bake at 350 for 30-35 minutes. Allow the cake to cool for 10 minutes before flipping it onto a cake plate. (Run a knife around the edge before flipping.) Cool the cake completely before serving.

Stir in the oats. Pour into a greased 8"x8" baking dish and spread evenly. Bake at 350 for 30 minutes or until done. Serve with a drizzle of maple syrup and top with fruit and/or nuts.

Minny's Chocolate Pie Source:  Food & Wine Ingredients: pie dough for 1 crust 1 1/2 cups sugar 3 tablespoons unsweetened cocoa powder 4 tablespoons butter, melted 2 eggs, beaten 3/4 cup evaporated milk 1 teaspoon vanilla extract 1/4 teaspoon salt whipped cream, for serving Directions: Prepare pie dough for baking in pie pan. Prick the crust lightly with a fork. Cover with parchment paper and fill with pie weights. Bake at 350 for 15 minutes, then remove weights and parchment and bake for 5 minutes more, just until the crust is dry but not brown. Meanwhile, whisk together all of the ingredients. Pour the filling into the pre-baked crust. Cover the edges with foil. Bake at 350 for 45 minutes, removing the foil for the last 5-10 minutes of baking.
