Lemon Bundt Cake with Cream Cheese Icing

  Source:  Southern Crush at Home Cake Ingredients: 1 box lemon cake mix 3.4 oz. package lemon pudding mix 1 cup sour cream 4 eggs 1/2 cup canola oil or melted butter 1/4 cup fresh lemon juice 1/4 cup water Icing Ingredients: 8 oz. cream cheese, room temperature 1/4 cup unsalted butter, softened 2 1/2 cups powdered sugar 1 teaspoon vanilla Directions: Using a stand mixer, beat all cake ingredients until well combined. Pour into a greased bundt pan. Bake at 350 for 40 minutes. Cool completely before removing the cake from the pan and icing. To make the icing, beat the cream cheese and butter until well combined. Slowly add the powdered sugar. Last, beat in the vanilla. Spread or pipe the icing over the cake.

Chocolate Cake

  Source:  Sally's Baking Addiction  (adapted slightly) Ingredients: 1 3/4 cups flour 3/4 cup unsweetened cocoa powder 1 3/4 cups sugar 2 teaspoons baking soda 1 teaspoon baking powder 1 teaspoon salt 2 teaspoons espresso powder 1/2 cup oil 2 eggs, room temperature 2 teaspoons vanilla 1 cup buttermilk, room temperature 1 cup freshly brewed hot strong coffee Directions: Whisk together the dry ingredients in a mixing bowl. Set aside. In another mixing bowl, use a stand mixer to whisk together the oil, eggs and vanilla on medium-high speed until combined. Add the buttermilk and whisk until combined. Slowly add the dry ingredients to the wet ingredients, a little at a time, whisking each time until combined. Slowly add the coffee, a little at a time, whisking each time until combined. Banana Cake with Peanut Butter Cream Cheese Frosting

  Source: New Better Homes and Gardens Cook Book (adapted) Cake Ingredients: 2 eggs 2 1/4 cups flour 1 1/2 cups sugar 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup mashed ripe bananas (about 3) 3/4 cup buttermilk 1/2 cup shortening 1 teaspoon vanilla Frosting Ingredients: 6 ounces cream cheese, softened 4 tablespoons butter, softened 2/3 cup creamy peanut butter 2 teaspoons vanilla 6 cups sifted powdered sugar splash of milk Directions: Allow eggs to stand at room temperature for 30 minutes.  Meanwhile, grease and lightly flour two 8 or 9-inch round cake pans or 1 9x13-inch pan or place cupcake liners in muffin pan.  Set pans aside. Strawberry Upside Down Cake

  Source:  Bunny's Warm Oven Ingredients: 1/4 cup plus 2 tablespoons butter, softened 1/2 cup brown sugar 1 cup sliced strawberries 1 1/3 cup flour 2/3 cup sugar 2 teaspoons baking powder 2/3 cup milk 1 egg, room temperature 1 teaspoon vanilla Directions: Melt 2 tablespoons butter and pour into a round cake pan. Sprinkle the brown sugar over the melted butter and gently stir to combine. Spread the mixture in the bottom of the pan. Sprinkle the strawberries evenly over the butter and brown sugar mixture. In a mixing bowl, combine the dry ingredients. Add the remaining butter (1/4 cup), milk, egg and vanilla and mix until combined. Gently spread the batter over the strawberries, trying not to move the strawberries around the pan. Bake at 350 for 30-35 minutes. Allow the cake to cool for 10 minutes before flipping it onto a cake plate. (Run a knife around the edge before flipping.) Cool the cake completely before serving.

Circus Animal Cookie Cheesecake

  Ingredients: 2 11-oz. bags Circus Animal Cookies 6 tablespoons butter, melted 4 8-oz. packages cream cheese, room temperature 1 1/4 cups sugar 4 eggs, room temperature 2 teaspoons vanilla 6 oz. white chocolate chips 1/4 cup heavy cream sprinkles Directions: Wrap the outside of a 9" springform pan with foil and lightly spray the inside with cooking spray. To make the crust, pour 1 bag of cookies in a food processor and blend until completely crumbled. Pour the butter in with the cookie crumbs and blend until well combined. Spread the mixture into the bottom of the springform pan. Use the bottom of a glass to flatten the mixture evenly across the bottom of the pan. To make the filling, in the bowl of a stand mixer, cream together the cream cheese and sugar. Add the eggs and vanilla and mix until combined. Ingredients: Crust: 24 Oreo cookies 6 tablespoons butter, melted Filling: 4 (8 oz.) packages cream cheese, room temperature 1 1/4 cups sugar 4 eggs, room temperature 2 teaspoons vanilla 1/2 cup mini chocolate chips Icing: 3 tablespoons butter, room temperature 1/3 cup unsweetened cocoa powder 1/2 teaspoon vanilla 1 1/4 cups powdered sugar 2-4 tablespoons milk Directions: Wrap the outside bottom of a 9" springform pan with foil (to prevent melted butter from seeping out while cooking). Lightly spray the inside of the pan with cooking spray. To make the crust, pulse the Oreo cookies in a food processor until crumbly. Add the melted butter and pulse until combined. Strawberry Chocolate Chip Cake

Source:  Julia's Album Ingredients: 1 1/2 cups flour 1 1/2 teaspoons baking powder 1/8 teaspoon salt 3 tablespoons butter, softened 3 tablespoons Greek yogurt (plain or vanilla) or sour cream 1 cup sugar 1 egg 1/2 cup milk 1 teaspoon vanilla 1/2 cup chocolate chips 1 pound strawberries, sliced Directions: Grease a 9-inch springform pan and line the bottom with parchment paper; set aside. Combine the butter, yogurt and sugar in a mixing bowl and beat until light and fluffy, no more than 2 minutes. Add the egg and mix at medium speed until light and fluffy. Mix in the milk and vanilla until combined. Slowly add the flour, baking powder and salt and mix on low speed until just combined. Fold in the chocolate chips. Pour the batter into the pan. Arrange strawberry slices on the top of the cake, pressing down slightly, until the entire top is covered. Source:  The View from Great Island  (adapted) Cake Ingredients: 9 tablespoons unsalted butter, softened 1 cup sugar 3 eggs, separated 2 cups flour 1 tablespoon baking powder 1 teaspoon salt 1/2 teaspoon baking soda 1 cup buttermilk (or plain Greek yogurt) 1 heaping cup raspberries Icing Ingredients: 2 sticks unsalted butter, softened 5 cups powdered sugar juice of 3-4 limes Directions: To make the cake, cream together the butter and sugar. Add the egg yolks and mix until combined. Add the dry ingredients and mix until combined. Add the buttermilk and mix until combined. In a separate mixing bowl, beat the egg whites until soft peaks form. Gently fold the egg whites into the cake mixture, then fold in the raspberries. Chocolate Crazy Cake Source:  Sweet Little Bluebird Ingredients: 1 1/2 cups flour 3 tablespoons cocoa powder 1 cup sugar 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon vinegar 1 teaspoon vanilla extract 5 tablespoons vegetable oil 1 cup water Directions: Spray an 8"x8" baking dish with cooking spray. Dump the first 5 ingredients in the baking dish and stir to combine. Make 2 small indentations and 1 large indentation in the dry ingredients. Pour the vinegar and vanilla extract in the small indentations. Pour the oil in the larger one. Pour the water over all. Stir until the batter is mixed well. Bake at 350 for 30-35 minutes. Frost with the icing of your choice.

Strawberry Cake Cake Ingredients: 1 box white cake mix 1 3 oz. package strawberry jello 3 tablespoons flour 1 cup vegetable oil 4 eggs 1 teaspoon vanilla 1/2 cup water 1 10 oz. carton frozen sliced strawberries in sugar, thawed and pureed Icing Ingredients: 4 tablespoons butter 3 cups powdered sugar 1 10 oz. carton frozen sliced strawberries in sugar, thawed and pureed  splash of vanilla pinch of salt half and half Directions: Mix all of the cake ingredients until well blended. Pour batter into a greased 9"x13" cake pan. Bake at 350 for about 35-40 minutes or until done. In a small pan, bring the strawberries to a simmer. Stir constantly until thickened and dark red. Chocolate Fudge Bundt Cake Source:  Let's Dish Cake Ingredients: 1 chocolate cake mix 1 3.9 oz instant chocolate pudding mix 2 cups sour cream 3 eggs 1/3 cup vegetable oil 1/2 cup water 2 cups chocolate chips Ganache Ingredients: 1 cup heavy whipping cream 8 oz semisweet chocolate, chopped Cake Directions: Grease and flour a 10" bundt pan. Beat all cake ingredients (except chocolate chips) until well blended. Mix in chocolate chips by hand. Pour batter into pan. Bake at 350 for 50 minutes to 1 hour. Cool for 15 minutes in the pan before turning out onto a platter. Ganache Directions: In a small saucepan, bring the cream to a simmer where bubbles are just starting to form around the edge of the pan. Remove the pan from the heat and whisk in the chocolate until completely melted and smooth.

Flourless Chocolate Cake Source:  Glorious Treats Cake Ingredients: 12 oz. semi-sweet chocolate, broken into pieces 3/4 cup unsalted butter, cubed 5 eggs 1 cup sugar 1 1/2 teaspoons vanilla extract 1/4 teaspoon salt 2 tablespoons water 1/4 cup unsweetened cocoa powder Glaze Ingredients: 4 oz. semi-sweet chocolate, broken into pieces 3 tablespoons unsalted butter, cubed Serve with  raspberry sauce Directions: Prepare a 9" springform pan by coating in butter or cooking spray. In a medium-sized, microwave-safe bowl, add 12 oz. chocolate and 3/4 cup butter. Microwave on 50% power for 1 minute and then stir. Continue to microwave on 50% power in 30 second intervals until completely melted. Set aside. With an electric mixer, whisk the eggs on medium speed for about 1 minute. Applesauce Spice Cake

Cake Ingredients: 1 jar (24 oz) applesauce 1/2 cup butter, softened 2 eggs 2 cups sugar 3 cups flour 2 teaspoons baking soda 2 1/2 teaspoons cinnamon 1/2 teaspoon cloves 1/2 teaspoon allspice Icing Ingredients: 3/4 cup butter 1 1/2 cups packed brown sugar 1/2 cup evaporated milk 1 1/2 cups powdered sugar Directions: Beat together the butter and sugar. Add eggs and beat until fluffy. In another bowl, combine flour, baking soda, cinnamon, cloves and allspice. Add applesauce and flour mixture to the other mixture. Beat until well combined. Pour batter into a greased 9"x13" pan and bake at 350 for 45-50 minutes. Allow cake to cool completely. To make icing, heat the butter and brown sugar on the stove until boiling; boil for 2 minutes, stirring constantly. Stir in the evaporated milk and let the icing cool until warm to the touch. Stir in the powdered sugar 1/2 cup at a time. Spread the icing over the cake and allow to cool before eating.

Honeybun Cake

Honeybun Cake Source:  Tasty Kitchen Ingredients: 1 box yellow cake mix 4 eggs 1 cup sour cream 3/4 cup vegetable oil 1 cup brown sugar 2 teaspoons cinnamon 2 cups powdered sugar 1/2 cup milk 1 teaspoon vanilla extract Directions: Mix the cake mix, eggs, sour cream and vegetable oil until well blended. In a separate bowl, mix the brown sugar and cinnamon until well blended. Pour half of the cake batter into a greased 9"x13" pan. Sprinkle half of the brown sugar mixture over the batter. Pour the remaining batter in the pan and sprinkle with the remaining brown sugar mixture. Swirl the batter and brown sugar mixture in the pan with a knife. Bake at 325 for 45-50 minutes. While the cake is baking make the glaze by whisking together the powdered sugar, milk and vanilla. When the cake is done, immediately pour the glaze over the hot cake, tilting the pan to evenly cover.
