Ingredients:
2 cups pancake mix
1 cup buttermilk
1/2 cup milk
1 egg
1/4 cup oil or melted butter
1 teaspoon vanilla
pancake toppings
Directions:
Pour the pancake mix into a large mixing bowl. Stir with a whisk to break up the lumps. Add the rest of the ingredients and mix until combined, but do not overmix. Allow the batter to rest for 5-10 minutes. Pour into a greased 9x13 dish. Bake at 425 for 10-15 minutes.
Notes:
-- To make cake batter pancakes, substitute 1 cup of pancake mix with 1 cup of cake mix.
