Ingredients:
3 egg yolks
1 1/2 cups heavy cream
1/4 cup sugar
1 tablespoon vanilla
1/4 teaspoon kosher salt
1 teaspoon cinnamon
1 loaf brioche bread, thickly sliced (tip: let the bread sit out for several hours to dry out)
butter
extra sugar for caramelizing
maple syrup
Directions:
In a mixing bowl, whisk together the egg yolks, cream, sugar, vanilla, salt and cinnamon. Pour the mixture into a shallow baking dish. Heat the griddle. Melt butter onto each spot of the griddle where a slice will cook. Place slices of bread in the egg mixture. Allow the bread to soak for about 10-15 seconds, then flip and allow the other side to soak for 10-15 seconds. Place the slices on the griddle. Cook for a few minutes until the bottom is light brown. Before flipping, sprinkle the top of the bread with a little sugar. Flip the slices and cook until this side is done. Sprinkle the other side with a little sugar and flip again to caramelize the other side. Serve with maple syrup.
