One-Pan Ham & Rice Skillet

Ingredients:
1 tablespoon olive oil
1/2 onion, finely diced
1/2 teaspoon minced garlic
3/4 cup uncooked white rice
1 cup diced ham
1 1/2 cups chicken broth
1 cup grated cheddar cheese

Directions:
Heat oil in skillet over medium heat. Add onion and cook until translucent. Add garlic and cook for another minute. Add the rice, ham and chicken broth. Cover and bring to a boil. Reduce heat and simmer until rice is fully cooked. Add water if necessary to get rice fully cooked. Stir in the cheese until melted.

Note:
Other meats and broths could be substituted.

Cut slits in the top crust to allow steam to escape. Place the pie on a baking sheet in case it bubbles over in the oven. Bake at 350 for 45 minutes or until the crust starts to brown.

Cheesy Chicken Noodle Casserole

Cheesy Chicken Noodle Casserole Ingredients: 1 lb. chicken, cooked and chopped 9 oz. pasta, cooked and drained 1 can cream of chicken soup 1 cup grated cheddar cheese 1/2 cup milk 1/2 teaspoon salt Fritos Directions: Mix all ingredients except Fritos in a large bowl. Pour into a greased casserole dish. Bake at 350 for 20-25 minutes. Serve with crushed Fritos on top.

Amish Baked Oatmeal

  Source:  Cooking Classy Ingredients: 1 1/2 cups milk 2 eggs 1/4 cup maple syrup, plus more for drizzling 1/4 cup butter, melted 1 1/2 teaspoons baking powder 1 teaspoon cinnamon 1 1/2 teaspoons vanilla 1/4 teaspoon salt 3 cups oats (quick or old fashioned) Directions: Whisk together all ingredients except the oats. Stir in the oats. Pour into a greased 8"x8" baking dish and spread evenly. Bake at 350 for 30 minutes or until done. Serve with a drizzle of maple syrup and top with fruit and/or nuts.
